Ingredients

  • 8 oz. SR flour
  • 1 tsp BP
  • 2 oz. butter or marg.
  • quarter pint milk
  • 1 lb cooking apples, peeled, cored and chopped
  • half tsp. cinnamon
  • For the lemon syrup: 1 lemon
  • 1 tbsp syrup
  • Half oz butter
  • 4 oz sugar
  • 7 fl. oz. water

Method

Step 1

Preheat oven to 190C. Make lemon syrup first.

Step 2

Peel lemon thinly and squeeze out juice.

Step 3

Put rind, juice & other ingredients in pan and heat gently. Stand till needed.

Step 4

Sieve flour and BP. Rub in fat until crumbs. Mix to a dough with milk. Roll onto floured board into an 8" square (quarter inch thick).

Step 5

Spread chopped apple pieces on, sprinkle with sugar and spice. Roll up like a swiss roll. Cut into 1" slices and arrange in a greased ovenproof dish.

Step 6

Remove rind from syrup and pour over the slices. Bake 30 minutes. Serve with custard.
